<li>2 garlic cloves, finely chopped</li>
<li>1 inch piece of peeled fresh ginger, finely chopped</li>
<li>1 1/2 tsp masala spice (ground cumin, cinnamon, clove, bay leaf, peppercorn, coriander, cardamom)</li>
<li>2 tbsp tomato puree</li>
<li>1 tsp fine sea salt</li>
<li>2 tbsp rice vinegar</li>
<li>10 dried apricots</li>
<li>2 tbsp honey</li>
<li>Parsley, for garnish</li>

<p>Directions</p>
<ol>
<li>Cut chicken into 2-inch pieces. Heat oil over medium heat in a deep skillet. Add onion and cook, stirring occasionally, until softened.</li>
<li>Stir in garlic, ginger and masala. Add chicken and stir-fry until cooked through, about 5 minutes.</li>
<li>Add tomato puree, salt and 1 cup water; bring to a boil. Reduce heat to low, cover and simmer 20 minutes.</li>
<li>Add vinegar and apricots to skillet, cover and simmer 15 minutes more. Transfer to a serving platter, drizzle honey over top and garnish with parsley, if desired.</li>
